Here is what you will need to make 16.
First, lightly grease & line your tin with baking paper and set to one side.
Preheat your oven to 180°C/Fan 170°C.
Put the butter into your microwavable bowl and break in the chocolate. Then pop it into the microwave in 10 second intervals, stirring well between each time, until it’s nicely melted.
Next, crack one egg into the bowl and beat well. Then break in the second egg and beat again until it’s nice and smooth.
Now add the sugar into the bowl and give it a really good mix until it’s nice and smooth again.
Then add in the vanilla and salt and stir once more until blended.
Next, sift in the flour and cocoa powder and gently fold until you can’t see any more flour.
All that’s left to do now is stir through those chocolate chunks/chips. (I prefer to chop up a whole 100g bar of white chocolate as you get nice big chunks instead of little chips!)
Then pour half the mixture into the bottom of your prepared tin and smooth out roughly with your spatula. Dot the raspberries all over the top and push them in slightly.
Next, pour over the remaining brownie mixture and smooth out as best as you can. Try to cover up all the raspberries.
Finally, pop it into the preheated oven to bake for 30-35 minutes. And that’s it!
Your kitchen will literally smell like heaven right now… I’m so jealous!
Now for the hard bit. Be patient and allow the White Chocolate Raspberry Brownies to cool to room temperature in the tin before transferring to chill in the fridge. Now you can remove and slice into 16 bars (a 4 x 4 grid). Store in an airtight container in the fridge and consume within 3-4 days – not that they’re gonna last that long, let’s be honest!
Seriously, just look at that. How unbelievably beautiful is that sight?! I literally want to bury my face in it, don’t you?! All that gorgeous, gooey, temptingly delicious, naughty, chocolatey goodness…. Come on, who wouldn’t enjoy this on Valentines Day? I know I would be bowled over if someone made these beauties just for me!
I hope you enjoyed the post my lovelies and Happy Valentines! Until next time.
