This egg bake recipe sounds marvellous doesn’t it?? Not only does it taste out of this world but it’s ridiculously easy to make and probably the greatest breakfast recipe in the history of the universe. Honestly, you have to try it to believe it!

Tomato and Parma Ham Breakfast Egg Bake – Step by Step Picture Recipe

Here is what you will need to serve 4.

Ingredients

  • Butter, Softened (For Greasing)
  • 2 Bagels
  • 4 Eggs
  • 4 Slices Parma Ham
  • 2 tbsp Strong Cheddar Cheese, Finely Grated
  • 1 tbsp Fresh Thyme Leaves
  • 12 x Cherry Tomatoes, On The Vine
  • Salt & Black Pepper

Essential equipment

  • Square Oven Proof Dish (Approx 23cm/9″ Square) or similar
  • 6cm Circle Cookie Cutter

Instructions

First of all, lightly grease your dish all over and line with a greased sheet of baking paper. It doesn’t have to be neat, just scrunch it all in there.

Preheat your oven to 200°C/Fan 190°C.

While the oven is preheating, slice your bagels in half and grease them with a little butter on both sides. Then take your cookie cutter and cut out the middles, making the holes big enough to fit the eggs.

Next press the bagels into your prepared dish and squash them down as best as you can. Crack an egg into each hole.

We’re almost there. All that’s left to do is drape a slice of parma ham over each bagel…

…and scatter over that lovely grated cheddar cheese and thyme.

Finally, top  with those cherry tomatoes and season with salt and black pepper.

Now you just need to pop it into the oven and bake for 12-15 minutes until the yolks are cooked to your liking. Also, be sure to check it in the last 5 minutes as it can go from a soft to a hard yolk very quickly!

And that’s it! Divide your Egg Bake between 4 serving plates and tuck in.

You can cover the bagel in ham but you cannot smother it in ham, very nice though
