Full English Frittata

Jam packed with flavour, this super tasty Full English Frittata is a perfect go to Sunday breakfast! Actually, when I think about it, it makes a cracking meal at any time of day! With all those classic English breakfast flavours, it’s sure to leave you wanting more. In other news, the lovely folks over at Harbour Living have been kind enough to give me some kitchen treasures for one of you lucky lot to win! Details at the end of the post.

Here is what you will need to serve 4.

(Recipe adapted from BBC Good Food)

  • 2 Uncooked Sausages, sliced
  • 4 Bacon Rashers, sliced
  • 150g Mushrooms, sliced (Any kind)
  • 6 Eggs
  • 3 tbsp Milk
  • Salt & Pepper
  • 140g Cherry Tomatoes, halved

 

Essential Equipment

  • Large Rectangular Oven Proof Dish *
  • Large Non Stick Frying Pan

*I used a 30 x 22cm (12″ x 8.5″)

Preheat your oven to 180°C/Fan 160°C and lightly grease & line the dish with baking paper.

Heat the frying pan over a medium heat and cook the sausage and bacon until cooked & golden.

Tip them into the prepared dish and spread out evenly.

With the pan still over a medium heat, add the mushrooms and fry for a few minutes until cooked.

Add the tomatoes to the pan and fry for 1-2 minutes just to soften them a little.

Scatter it all evenly over the sausage & bacon.

In a jug, beat together the eggs, the milk and a very generous helping of salt & pepper.

Pour into the dish and bake in the preheated oven for 20 – 25 minutes until set.

Meanwhile, to make the beans simply pour the beans into a saucepan, mix in the paprika and heat through.

Scatter the frittata with some chopped parsley, (optional) slice into 4 then divide between four plates with the beans. Serve straight away.

Didn’t I tell you it was easy? Full English Frittata makes it sound a bit posh, but it’s basically good old fashioned English comfort food with a slightly fancier name! Still just as delicious though I assure you!

And what about that gorgeous dish I used hey? Part of the new From Scratch range from Harbour Living, in striking red & cream it makes for a lovely addition to the kitchen. I really like the Shepherd’s Pie recipe that’s printed in the centre of the dish, such a nice touch! There are different recipes printed in each different type of dish too.

They’re really easy to wash and ovenproof up to 230°C making them versatile to use for a multitude of different recipes. I also love that they have handles, meaning I’m not faffing to get it in and out the oven, covering my oven gloves in the food I’m about to eat!
