Ever need a recipe that you can just throw together without big expense in both effort and funds? This incredibly delicious Bacon Cheese Frittata is exactly what you need!
Packed with some serious flavour, this fantastic cheap eats dish fills a hole and then some. A perfect midweek meal or dinner party starter. Added bonus? It’s naturally gluten free!
Bacon Cheese Frittata – Step by Step Picture Recipe
Here is what you will need to serve 4 as a main course with a side.
Ingredients
- 8 Rashers Smoked Back Bacon
- 200ml Milk
- 8 Eggs
- 75g Extra Mature Cheddar Cheese, Grated (Divided)
- 1 heaped tbsp Fresh Chives, Chopped
- Salt
- 6-8 Cherry Tomatoes, Halved
Essential Equipment
- Large Mixing Bowl
- 24cm (9.5″) Square Dish or Similar
Instructions
Firstly line your baking dish with baking paper (it doesn’t have to be neat) and preheat your oven to 190°C/ Fan 180°C.
To cook the bacon, cover a baking tray in foil and evenly lay out the rashers. Place into the oven to cook until the fat is starting to crisp. (Approx 15-20 minutes.) Turn them all over after about 10 minutes to ensure even cooking.
Short on time? You can make air fryer bacon instead.
Allow to cool for a few minutes then chop into rough pieces.
Next, beat together the milk and eggs in a large mixing bowl.
Then mix in the chopped bacon, 50g of the cheese, the chives and a good pinch of salt.
Next pour the mixture into your prepared dish. If you need to, spread the bacon pieces out a little with a fork.
Now scatter over the remaining 25g of grated cheese and dot the halved cherry tomatoes on the top facing upwards.
Finally, bake in your preheated oven for 30-35 minutes until it’s puffed up and golden on top.
If you are eating hot, simply allow to cool for a couple of minutes before slicing and serving with a side salad or some potatoes. Alternatively, you could allow it to cool completely in the dish then wrap up, refrigerate and take on your next picnic. The choice is yours!
You can’t tell me you’re not tempted by that… look at the beautiful colours, it’s so appetising! The great thing about this recipe is you can switch out any ingredient you or your guests aren’t happy with.
Don’t like tomatoes? Swap it with some red peppers. Not a fan of bacon? How about some chicken instead? Always a crowd pleaser this one!
