Have you ever realised quite how easy coleslaw is to make? No?! Well I’m here to show you that making your own is nowhere near as difficult as you think it is and it tastes way better than shop bought! I’m telling you, everyone will think you’ve slaved away for ages in the kitchen when secretly we know it only took you 10 minutes! I’m not even joking, 10 minutes, that’s it. It’s also the perfect BBQ side, need any more excuses to try it?
Here is what you will need to make A LOT of coleslaw! (At least 2kg.)
- 1/2 White Cabbage
- 1 Small Yellow Onion
- 4 Carrots
- 1 x 600g Jar of Mayonnaise *
*I used Hellmann’s Full Fat Mayonnaise.
Essential Equipment
- Food Processor with Grating Disc
- Very Large Bowl
Easy Coleslaw Recipe
First thing’s first, prep your vegetables ready for the processor.
Chop the cabbage up into rough pieces, peel & quarter the onion, peel the carrots & chop the tops off (yes, I know, I forgot to chop the tops off before I took the photo!)
Using the grater attachment/disc in your food processor, push through all the vegetables and blitz until they’re grated. You may need to do this in a couple of batches as this will make a surprising amount!
Tip the grated vegetables into a large bowl. Then realise you haven’t used a big enough bowl and get a bigger one…
That’s better… Now give it a quick mix.
Here comes the magic. Tip in every last drop of that mayonnaise and give it a really really good mix until everything is absolutely smothered in the stuff.
Et vous voila! That’s it. Seriously. All done.
Cover with cling film and pop into the fridge to allow to flavours to develop for 30 minutes before serving and that’s your lot my friend!
Store in an airtight container in the fridge and consume within 3-5 days.
There really is no need for any fancy ingredients or methods. All it requires is just 4 ingredients, a food processor & a big bowl to make incredibly delicious, Easy Coleslaw!
