Do you ever get that moment when you just need cake, like NOW? This gorgeous Strawberries & Cream Mug Cake will solve all your problems. Made in less than 10 minutes, you’ll be stuffing your face with beautiful cake before you can say Supercalifragilisticexpialidocious! Are you reaching for your mug yet?
Here is what you will need to make 1.
- 2 tbsp Unsalted Butter
- 1 Egg
- 2 tbsp Semi Skimmed Milk
- 1 tsp Vanilla Extract
- 3 tbsp Golden Caster Sugar
- 4 tbsp Self Raising Flour
- Pinch of Salt
For the Decoration
- 40ml Double Cream
- 1 tbsp Icing Sugar
- 1 tbsp Strawberry Jam
- Single Strawberry (optional)
- 350ml Mug
Strawberries & Cream Mug Cake Recipe
Firstly, pop the butter into your mug & melt in the microwave in 10 second intervals.
Then add in the egg, milk & vanilla and mix with a fork until it’s blended.
Next add the sugar, flour & salt and beat one final time until nice & smooth.
Cook in the microwave for: 600W – 1 min 25 secs | 800W – 1 min 15 secs | 1000W – 1 min 5 secs.
If you have the patience, leave it to cool while we quickly make the topping!
Then with either a whisk or fork, whip up the cream with the icing sugar until it forms stiff peaks.
Finally, dollop the jam on top of the cake followed by the sweetened cream. You can even pop a strawberry on the top if you’re feeling fancy!
Come on, you can’t tell me that doesn’t look tempting! It really is a delightful little treat. It’s probably the best mug cake in the world and so typically British it hurts! I strongly advise you use a good quality vanilla extract though, it makes all the difference I promise! In addition to that, Summer Strawberries are the perfect pairing. Make the most of them when they are around!
