In this post you will learn just how easy it is to make the most INCREDIBLE slow cooker BBQ chicken! I’ve used this recipe at many a gathering (and so have my friends and family) and every single time I hear nothing but yummy noises and ‘oh my life, I need this recipe!’ So here we are… I’m sharing my secrets with you so you can enjoy all the praise by impressing your own friends and family! Speaking of slow cooker chicken recipes, have you seen my insanely easy slow cooker chicken teriyaki recipe??
I’m quickly realising that being a busy Mum doesn’t mean you have to miss out on incredible food. Turns out, it’s super easy with a slow cooker! One of the most forgotten about kitchen appliances that really can churn out some amazing meals. (Just like this epic slow cooker chicken curry recipe and gorgeous slow cooker pulled pork recipe!) This shredded BBQ chicken recipe is no exception! It requires next to no effort, very little ‘hands on’ time & minimal pot washing. Yet still manages to deliver flavour in a big way. Go on, let the slow cooker do all the hard work for you!
Here is what you will need. (Makes a lot!)
Let’s get started! Place the chicken breasts (900g | 1 lb 16 oz) into the slow cooker & season both sides of each one with a little salt & pepper.
In a medium sized bowl, mix together the BBQ sauce (250ml | 1 Cup), Italian salad dressing (60ml | 1/4 Cup), brown sugar (50g | 1/4 Cup) & Worcestershire sauce (1 tbsp) until smooth.
Pour the sauce into the slow cooker and mix until the chicken is completely covered.
Pop the lid on and cook on high for 3 – 3 and a half hours, until the chicken is cooked through.
Take one breast out at a time & shred in a bowl using the backs of two forks together.
When it’s all nicely shredded, dump it back into the slow cooker for 10 – 15 minutes on warm to soak up all those lovely BBQ juices!
You can serve this with anything. You could have it in a cob (Yes, it’s COB where I come from!) with a big dollop of coleslaw, or serve with rice, or even have it cold in a sandwich the next day. Hell, this could make you the most awesome packed lunches to take to work for a week!
It really is delicious and only takes up about 10 minutes of your time. What’s not to like?! Go and try it NOW!
