How to Make an Easy Sausage Casserole in Just ONE Pan! {Video Tutorial Included}

This super easy sausage casserole recipe not only tastes delightful but it’s healthy and requires very minimal effort. Just like my epic Toad in the Hole recipe, it’s also made using just one pan too! Yep – this is the dream meal right here!

This easy sausage casserole has been made in my house more times than I can count! It’s most definitely a household staple and one that I always find myself recommending to people when they ask me for recipes. Even when my fussy eating child came along – I just chopped everything a little smaller and even she loved it! It’s the perfect easy, healthy meal. 

It’s also cheap to make too, especially if you find great sausages when they’re on offer! You really can’t lose with this recipe.

That being said, if you’d rather go ‘comfort food’ sausage as opposed to healthy – this one pot cajun sausage pasta will be right up your street!

What sausages can you use in a sausage casserole?

Literally any sausages you want! Lincolnshire, Cumberland, chipolata… any sausage you fancy or happen to have in your fridge will work just fine. You can even make it vegan by using vegan sausages instead! It’s worth noting that these are usually frozen and tend to cook a lot quicker though, so they’re probably best added to the pan right before they go back into the oven for the final 20 minutes. (Not right at the start as per the recipe below.)

How easy is a sausage casserole to make?

There are only 2 step by step images in this post. If you’ve used any of my recipes before, you’ll know that this only means one thing – it’s CRAZY easy to make! Literally all you have to do is chop some veggies and throw them in a roasting pan with some sausages, seasoning and oil. Roast for a little while – then add some tinned tomatoes, stock and herbs. Then roast again for a bit and that’s it! The oven pretty much does all the hard work for you.

Tips on how to make an easy sausage casserole

Never made a sausage casserole before? Here’s some useful tips to help you get it right!

  • Don’t just dump it all in and hope for the best! Follow my instructions on how to slightly segment the cooking of different ingredients and everything will be fine. (Just like my one pan sausage and beans, you kind of have to part cook the sausages & veg first for it to work really well!)
  • Want to use different types of peppers/onions than what’s stated in the recipe? You absolutely can! Don’t be afraid to mix things up a little or use up what you have in the cupboards.
  • Want to add some extra depth of flavour? Add 1 tbsp of balsamic vinegar in along with the tomatoes and you won’t regret it.
  • Use a good non stick pan.
  • Cooking for fussy eaters? Chop the veg smaller or even keep as per the recipe then blitz in a processor after for a smooth ‘bits free’ sauce.

Easy Sausage Casserole Recipe

Here is what you will need to serve 2.

  • 1/2 Yellow Pepper
  • 1/2 Red Pepper
  • 1 Red OR Yellow Onion
  • 6 Sausages
  • Salt & Pepper
  • 1 tbsp Olive Oil
  • 1 x 400g (14 oz) Tin Chopped Tomatoes
  • 130 ml (1/2 Cup + 1 tbsp) Chicken or Vegetable Stock
  • A Few Fresh Basil Leaves, Torn

 

Essential Equipment

  • Medium Roasting Dish

 

Preheat your oven to 200°C/Fan 180°C.

First, roughly chop the peppers (1/2 yellow + 1/2 Red) & the onion (x 1) and place it all into a roasting tray along with the sausages (x 6). Season with salt & pepper, drizzle with the olive oil (1 tbsp) and roast in the middle of the preheated oven for 20 minutes.

After the 20 minutes is up, the vegetables should have softened and it should all have a nice colour to it. So, remove the tray from the oven and add the tomatoes (400g | 14 oz tin), stock (130 ml | 1/2 Cup + 1 tbsp), basil (a few leaves) and a little more salt & pepper to taste. Mix well and return to the oven for a further 20 minutes until the sausages are cooked through and the sauce has thickened a little.

Once the sausages are cooked through, take the pan out of the oven and divide between two plates. Serve your Sausage Casserole with some garlic bread or even a few roast potatoes and enjoy this deliciously guilt free dinner!

And that is literally it! I bet you’ve never even seen a recipe on my site that has this few a step by step pictures. Just 2. TWO! It really is that easy to make. You absolutely need to give this one a try. It’s so tasty, so versatile and actually really healthy! You can’t lose.

This super easy sausage casserole will become a firm household favourite I guarantee it! Easy to make, healthy, seriously delicious and all made in just one pot. Perfect! {naturally GF}

Ingredients

  • 1/2 Yellow Pepper, roughly chopped
  • 1/2 Red Pepper, roughly chopped
  • 1 Red OR Yellow Onion, peeled & roughly chopped
  • 6 Sausages
  • Salt & Pepper
  • 1 tbsp Olive Oil
  • 1 x 400g (14 oz) Tin Chopped Tomatoes
  • 130 ml (1/2 Cup + 1 tbsp) Chicken or Vegetable Stock
  • A Few Fresh Basil Leaves, Torn

Essential Equipment

  • Medium Roasting Dish

Instructions

  1. Put the yellow pepper, red pepper, onion and sausages in the roasting dish. Season with salt and pepper & drizzle over the oil.
  2. Roast in the oven for 20 minutes.
  3. Remove from the oven, add the tinned tomatoes, stock and basil. Mix well.
  4. Place back into the oven for 20 minutes until the sausages are cooked.
  5. Serve immediately.

Notes

This goes well with a slice of garlic bread or some roast potatoes.
