This super easy sausage casserole recipe not only tastes delightful but it’s healthy and requires very minimal effort. Just like my epic Toad in the Hole recipe, it’s also made using just one pan too! Yep – this is the dream meal right here!
This easy sausage casserole has been made in my house more times than I can count! It’s most definitely a household staple and one that I always find myself recommending to people when they ask me for recipes. Even when my fussy eating child came along – I just chopped everything a little smaller and even she loved it! It’s the perfect easy, healthy meal.
It’s also cheap to make too, especially if you find great sausages when they’re on offer! You really can’t lose with this recipe.
That being said, if you’d rather go ‘comfort food’ sausage as opposed to healthy – this one pot cajun sausage pasta will be right up your street!
Literally any sausages you want! Lincolnshire, Cumberland, chipolata… any sausage you fancy or happen to have in your fridge will work just fine. You can even make it vegan by using vegan sausages instead! It’s worth noting that these are usually frozen and tend to cook a lot quicker though, so they’re probably best added to the pan right before they go back into the oven for the final 20 minutes. (Not right at the start as per the recipe below.)
There are only 2 step by step images in this post. If you’ve used any of my recipes before, you’ll know that this only means one thing – it’s CRAZY easy to make! Literally all you have to do is chop some veggies and throw them in a roasting pan with some sausages, seasoning and oil. Roast for a little while – then add some tinned tomatoes, stock and herbs. Then roast again for a bit and that’s it! The oven pretty much does all the hard work for you.

Here is what you will need to serve 2.

Preheat your oven to 200°C/Fan 180°C.
First, roughly chop the peppers (1/2 yellow + 1/2 Red) & the onion (x 1) and place it all into a roasting tray along with the sausages (x 6). Season with salt & pepper, drizzle with the olive oil (1 tbsp) and roast in the middle of the preheated oven for 20 minutes.
After the 20 minutes is up, the vegetables should have softened and it should all have a nice colour to it. So, remove the tray from the oven and add the tomatoes (400g | 14 oz tin), stock (130 ml | 1/2 Cup + 1 tbsp), basil (a few leaves) and a little more salt & pepper to taste. Mix well and return to the oven for a further 20 minutes until the sausages are cooked through and the sauce has thickened a little.
Once the sausages are cooked through, take the pan out of the oven and divide between two plates. Serve your Sausage Casserole with some garlic bread or even a few roast potatoes and enjoy this deliciously guilt free dinner!
