Chicken is quite possibly my favourite meat, but I’m getting really tired of doing the same things with it. I need a change! This Baked Parmesan Chicken recipe is great. It has tons of flavour & it’s really simple to make. Me and the Mr had ours with roast potato slices & roast cherry tomatoes, but you could have it with anything! Pasta, rice, salad, cous cous… the possibilities are endless.
Here is what you will need to serve 2 (Easily doubled.)
- 2 Skinless, Bonesless, Chicken Breasts
- Salt & Pepper
- 60g Mayonnaise
- 25g Parmesan Cheese, freshly grated
- 1/4 tsp Garlic Powder
- 2 – 3 tbsp Panko Breadcrumbs
Baked Parmesan Chicken Recipe
Preheat your oven to 200°C/Fan 190°C.
Line a baking tray with foil & place the chicken breasts on top. Season both sides with salt.
In a small bowl, mix together the mayonnaise, parmesan & garlic powder. Divide the mixture between the two breasts & smear evenly all over the top. Season with a little salt & pepper.
Place into the oven to bake for 15 minutes.
Remove from the oven & top each chicken breast with some breadcrumbs. (Be careful not to burn yourself.)
Place back into the oven for a further 20 minutes or until the chicken is cooked through and the topping is crispy & golden.
Serve with whatever takes your fancy & devour immediately!
Both me and the Mr really enjoyed this. It’s simple but brilliant and the chicken was so tender & juicy! This one is definitely a winner winner chicken dinner and I will most certainly be making it again. You could even change it up a little, add some dried herbs into the mayonnaise mixture, mix together with some pesto or spice it up with some chilli flakes! It’s really versatile and a dish that will please the whole family.
