Slow Cooker Carrot and Coriander Soup Recipe

It’s been many years since the creation of my honey carrot soup recipe, I thought it was about time for a new one to fall in love with!

It also occurred to me that I haven’t had my slow cooker out in quite a while. Which is a shame because slow cooker recipes make for perfect midweek meals! I knew this needed rectifying!

I don’t like slow cooker recipes that require lots of faffing and pre-cooking though, it defeats the point doesn’t it?

‘Dump and go’ recipes like this slow cooker vegetable soup are my all time fave. Just chop everything, throw it in and switch it on. That’s it!

This slow cooker carrot and coriander soup really is such a warm and comforting dish. Perfect as a starter, lunch or even a hand warmer in a mug on a cold evening. Just trust me, you’re gonna love this one!

How to make slow cooker carrot and coriander soup – recipe summary

  1. Peel and chop your veg.
  2. Place onion, carrot, potato, vegetable stock, ground coriander and salt and pepper into your slow cooker.
  3. Cook on low for 6 hours.
  4. Blend until smooth.
  5. Stir through fresh coriander.

Ingredients

Here’s all you need to know about the ingredients needed for this recipe.

  • Onion – A medium brown onion works best. I personally wouldn’t switch for red onion here as it might overpower the main flavours of the dish.
  • Carrots – Regular carrots are great in this recipe. No need to get fancy with expensive chantenay carrots or anything! Size also doesn’t really matter as you’ll be chopping them into equal pieces.
  • Potato – Again, no need to get fancy. Just a medium baking potato works perfectly.
  • Vegetable Stock – I like to use Knorr stock pots (affiliate link) as the flavour always seems nice and rich. You can use cubes or fresh stock if that’s what you have.
  • Ground Coriander – Don’t skip this if you can help it. It adds a rich, deeper coriander flavour which works perfectly with the fresh coriander.
  • Salt & Pepper – I like to use sea salt and freshly cracked black pepper but, honestly, table salt and ground pepper will work too. Just don’t leave it out whatever you do!
  • Fresh Coriander – This is KEY. Do not leave out the fresh coriander. No need to ditch the stalks either – there’s tons of flavour lurking there!

Recipe tips

Here are some helpful tips to keep you on the right track when making this slow cooker carrot and coriander soup.

  • Use the freshest and best ingredients that you can buy. This is important, especially in a recipe as fresh as a homemade soup!
  • Try to cut ingredients to a similar size so they cook at a more even pace.
  • Make sure you season with salt and pepper to bring out the best flavour from your ingredients.
  • Allow your soup to cool before blending. Hot liquids have a tendency to explode in enclosed high speed situations!
  • You can make this recipe in advance and freeze in individual portions. This helps save you time and waste less!

Slow Cooker Carrot and Coriander Soup – Step by Step Picture Recipe

Ingredients

Here is what you will need to serve 4.

  • 1 x Onion (approx 140g | 5 oz), peeled and cut into eighths
  • 575g (20 oz) Carrots, peeled and cut into 1″ pieces
  • 1 x Potato (approx 300g | 10.5 oz), peeled and cut into 1″ pieces
  • 1.5 litres (1 + 9/16 quarts) Vegetable Stock
  • 1/2 tsp Ground Coriander
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 3 tbsp Fresh Coriander, chopped

Essential equipment

  • 3.5 litre Slow Cooker (3 + 3/4 quarts)
  • Food Processor or Stick Blender

Instructions

Place the sliced onion ( x 1, approx 140g | 5 oz), chopped carrots (575g | 20 oz), chopped potato (x 1, approx 300g | 10.5 oz), vegetable stock (1.5 litres | 1 + 9/16 quarts), ground coriander (1/2 tsp), salt (1/4 tsp) and pepper (1/4 tsp) into the bowl of your slow cooker.

Place on the lid then cook on low for 6 hours.

When the time is up, all the vegetables should be cooked through and your house will smell amazing!

Allow your soup to cool a little before attempting to blend. (Blending hot liquids can be dangerous and a bit explosive!)

I personally use my NutriBullet (affiliate link) as it turns everything into a smooth, velvety dream! (Every blender I’ve had has been rubbish in comparison.)

Blend in batches until your soup is silky smooth throughout. (Or use a stick blender and do it right there in the slow cooker.)

Now stir through the fresh coriander and check the seasoning. Add more salt and pepper if you think it needs it.

At this point I recommend cooling your soup completely and allowing it to chill in the fridge for a day before eating. This allows the flavours to blend together harmoniously.

When you’re ready to eat, simply heat in a saucepan until piping hot and serve with a nice crusty loaf.

How to store carrot and coriander soup

Cool your soup completely then cover and store in the fridge, consuming within 3 days.

Alternatively you can freeze your soup in individual portions for up to 3 months. This helps save you time and makes less waste!

Is carrot and coriander soup good for you?

Absolutely! Carrot and coriander soup is a super healthy, low fat dish that not only tastes delicious but delivers a nutrient packed punch too.

It’s also naturally dairy free, vegan and gluten free. WIN! Do check the labels to be sure though, as some brands vary.

Can you freeze carrot and coriander soup?

Yes you can freeze homemade carrot and coriander soup. For best results, allow it to cool completely before pouring into freezer bags/tubs. Store frozen for up to 3 months and defrost thoroughly before reheating.

  4. Blend your soup in batches (either in a blender, NutriBullet or with a stick blender) until smooth and lump free.
  5. Stir through the freshly chopped coriander and check the seasoning. Add more if necessary.

I make this soup on a regular basis - not in a slow cooker - a few changes - I sauté carrots and potatoes in butter then add other ingredients- after blending I add a can of carnation milk - calories I know !!! - but for that extra special occasion - delicious
