Easy Baked Parmesan Chicken Recipe

Why baked parmesan chicken?

Chicken is quite possibly my favourite meat, but I’m getting really bored of doing the same things with it. Do you fall into this trap too? Do you need a change like me?

This baked parmesan chicken recipe really is great. It has TONS of flavour and it’s really simple to make! It reminds me of air fryer chicken breasts, but more creamy and cheesy.

Me and the Mr had ours with roast potato slices and roast cherry tomatoes, but you could have it with anything! Pasta, rice, salad, couscous… the midweek meal possibilities are endless.

Baked Parmesan Chicken – Easy Step by Step Picture Recipe

Ingredients

Here is what you will need to serve 2 (Easily doubled.)

  • 2 Skinless Boneless Chicken Breasts
  • Salt & Pepper
  • 60g (1/4 Cup) Mayonnaise
  • 25g (1/4 Cup) Parmesan Cheese, freshly grated
  • 1/4 tsp Garlic Powder
  • 2-3 tbsp Panko Breadcrumbs

Essential equipment

  • Baking Tray
  • Foil
  • Small Bowl

Instructions

Preheat your oven to 200°C/Fan 190°C/392ºF and line a baking tray with foil. Season both sides of your chicken breasts (x 2 skinless and boneless) with salt and pepper, then place onto the tray.

In a small bowl, mix together the mayonnaise (60g | 1/4 Cup), grated parmesan (25g | 1/4 Cup) and garlic powder (1/4 tsp). Divide the mixture between the two breasts and smear evenly over the top. Season with a little more salt and pepper.

Then place them into the preheated oven and bake for 15 minutes.

Next, remove the chicken from the oven and top each breast with some panko breadcrumbs (2-3 tbsp). (Be careful not to burn yourself.)

Then place it back into the oven for a further 20 minutes, or until the chicken is cooked through and the topping is crispy and golden.

Serve immediately with whatever takes your fancy!

What’s the verdict?

Both me and the Mr really enjoyed this. It’s simple but brilliant, and the chicken was so tender and juicy! This one is definitely a winner winner chicken dinner and I will most certainly be making it again.

It’s really versatile too! Try adding some dried herbs into the mayonnaise mixture, mix together with some pesto or spice it up with some chilli flakes!

Tender and juicy baked parmesan chicken is the perfect midweek meal! With a crispy panko crunch over a creamy parmesan topping, this easy to make dish won't disappoint!

Ingredients

  • 2 Skinless Boneless Chicken Breasts
  • Salt & Pepper
  • 60g (1/4 Cup) Mayonnaise
  • 25g (1/4 Cup) Parmesan Cheese, freshly grated
  • 1/4 tsp Garlic Powder
  • 2-3 tbsp Panko Breadcrumbs

    2. Mix the mayonnaise, parmesan and garlic powder together in a small bowl, then divide between the two chicken breasts and spread to cover the tops. Season with a little more salt and pepper.
    3. Bake them in the oven for 15 minutes, until golden on top.
    4. Remove the chicken from the oven and carefully top each one with breadcrumbs. Place back into the oven until crispy and golden (about 20 minutes).
    5. Serve immediately with your favourite sides. I chose baked potato slices and baked cherry tomatoes.
