You only have a couple of days left before Christmas, you’re panicking because there’s still a few people you haven’t bought presents for, but you want something personal & home made. Good job I’ve got you covered isn’t it?! Have a go at this really simple & quick Christmas Fudge recipe. With just 4 ingredients & no thermometer, it’s genuinely very difficult to mess this one up!
Here is what you will need to make approx 36 pieces.
- 6 Candy Canes
- 1 x 397g Tin of Condensed Milk
- 500g White Chocolate, broken into pieces
- 1 tsp Vanilla Extract
Essential Equipment
- 20 x 20cm (8 x 8″) Square Baking Tin or Silicone Pan
First thing’s first. Line the base & sides of your tin with baking paper. If you are using a silicone pan, you don’t need to.
Remove the candy canes from their wrappers then either roughly chop them with a knife or in a mini food processor. If using a processor, be careful not to overdo it, just pulse them.
In a large non stick saucepan over a low heat, gently melt together the condensed milk, white chocolate and vanilla extract. Stir until completely melted & smooth.
Quickly pour the mixture into the prepared tin and spread out using the back of a spoon.
Immediately scatter the chopped candy canes over the top and press down slightly to make sure they stick to the fudge.
Place into the fridge to set for a couple of hours then slice into 36 pieces using a sharp knife. (A 6 x 6 grid.) You may wish to oil the knife slightly to help it not to stick but be very careful not to cut yourself.
Store in an airtight container in the fridge & consume within 1 – 2 weeks.
I told you it was quick & easy! Minimal effort with great results. Simply place some fudge pieces into nice cellophane bags & tie with a pretty ribbon, et vous voila, lovely home made gift!
