Who said we need to say goodbye to ice creams when it gets cold eh?? Now you enjoy this glorious winter alternative in a matter of minutes! Made in the microwave, the cones are filled with tasty vanilla sponge and topped off with a vanilla buttercream. And the best bit? The chocolate flake obviously!!

Vanilla Cupcake Cones Recipe
Here is what you will need to make 4 cones.
Ingredients
For the Sponge
- 2 tbsp (30g) Unsalted Butter
- 1 medium Egg
- 1 tbsp Semi Skimmed Milk
- 2 tsp Vanilla Extract
- 3 tbsp Golden Caster Sugar
- 4 tbsp Self Raising Flour
- Pinch of Salt
- 4 Small, Flat Bottomed Ice Cream Cones *
For the Buttercream Frosting
- 4 tbsp (60g) Unsalted Butter
- 6 tbsp Icing Sugar
- 1/4 tsp Vanilla Extract
For Decoration (Optional)
- 2 Cadbury’s Flakes, halved
- Rainbow Sugar Sprinkles
*Use good quality ones as the cheaper, thinner ones can ‘melt’ a little during cooking.
Instructions
Place the butter into a microwave safe jug and cook in 15 second intervals in the microwave until melted.
Add in the egg, milk and vanilla extract. Mix until smooth with a fork then add the caster sugar, flour and salt. Mix again until smooth and lump free.
Divide the mixture between the 4 cones and place on a microwave safe plate.
Cook in the microwave for:
600W – 1 min 45 secs 800W – 1 min 30 secs 1000W – 1 min 15 secs
Leave to cool whilst we prepare the frosting.
In a bowl, soften the butter with the back of a metal spoon.
Add the icing sugar and vanilla extract and beat until smooth, light and fluffy.
Load the frosting into a piping bag fitted with a large star nozzle and pipe swirls on the top of each cone.
Push a flake into each one and top with a few rainbow sprinkles. Alternatively you could drizzle on some strawberry or chocolate sauce.
Did I not tell you they were quick to make?! These are so addictive and so pretty! You can really mess around with the flavours to suit your tastes too. Just switch out the vanilla extract for any flavouring of your choice.
