This amazing Toffee Popcorn Bark is so ridiculously easy to make, I actually think my cats could do it! No baking involved, just melting and pouring… that’s about it. Not only does it look great it really does taste great too and would make a perfect gift for loved ones this Christmas.
Here is what you will need.
- 200g Milk Chocolate
- 200g White Chocolate
- 60g Toffee Popcorn *
*I used ButterkistEssential Equipment
- 20 x 30cm (8 x 12″) Rectangular Baking Tin
Firstly, line the base and 2 sides of the tin with baking paper and set to one side.
Break the milk chocolate into a glass bowl and the white chocolate into another glass bowl.
At this point, you can simply melt the chocolates in 20 second intervals in the microwave, stirring between each time until smooth. Or you can temper them.
To do that, reduce your microwave’s power to it’s lowest setting and heat the milk chocolate for 30 seconds at a time stirring really well in between. Once the chocolate is two thirds melted DON’T microwave again as the chocolate is hot enough to melt the rest. Just stir well until it’s completely melted and smooth. Don’t be tempted to increase the power either, be patient. The idea is not to melt the chocolate too quickly or get it too hot.
Repeat the process for the white chocolate.
Haphazardly pour two thirds of the milk chocolate into the prepared tray then do the same with the white chocolate.
Take a knife and gently encourage the chocolate into the edges and corners, then create swirl/marbled patterns throughout the middle.
Dot the popcorn all over and gently press into the chocolate to make sure it will stick.
Drizzle the remaining milk & white chocolate over the whole thing then, if you like, take a knife and carefully marble the chocolate again.
Allow to set completely at room temperature. (Especially if you tempered your chocolate.)
When it’s set, snap into pieces and store in an airtight container.
These really would make beautiful gifts if you placed some shards into cellophane bags and tied them up with pretty ribbon. Everyone would be begging you for the recipe and you could brag about how you spent hours slaving away in the kitchen… I’ll keep your little secret!
