With the festive/party season just around the corner, are you always on the lookout for foodie ideas to wow your friends & family? Don’t worry, I’ve got you covered! This intensely rich & indulgent Toasted Marshmallow Brownie Bites recipe is guaranteed to knock their socks off! And ssshhh… they’re actually really easy to make. I won’t tell if you don’t!
Here is what you need to make 25 incredible bite size portions.
*I used Haribo Barbecue White Chamallows as they were the perfect size when cut in half.
First lightly grease & line your baking tin with baking paper then preheat your oven to 180°C/Fan 170°C.
Then add the butter into a large bowl and break in the chocolate. Melt in the microwave in 20 second intervals, stirring well between each time. Try not to overheat. Leave to one side for a few minutes to cool to room temperature.
Next, one at a time, beat in the eggs. Mix very well between each addition.
Then add in the sugar and give it a really good beating with a spatula. It should stop being really grainy and become quite smooth.
Stir through the vanilla & salt then sift in the flour & cocoa powder.
Fold it all together with a spatula but don’t overdo it. Fold just until you can’t see anymore flour left in the batter.
Then pour the lot into your prepared tin and smooth out evenly.
Bake in the oven for 20-25 minutes. It will probably be a little crisp on top but I promise it will be gorgeous and gooey in the middle!
Allow to cool completely at room temperature in the tin before removing and slicing into 25 bites. (A 5 x5 grid.)
Now roughly chop that 40g of dark chocolate and pop it into a disposable piping bag or plastic food bag. Heat in the microwave on full power in 20 second intervals, giving it a good squish between each time, until it’s nice and melted.
Then snip the end/corner off and pipe a little blob onto the top of each brownie bite.
Next, if you are using the same/similar marshmallows as me – cut them in half (otherwise they will be too tall to bite!) and stick one half to the top of each brownie bite, sticky side down.
Now for the really fun bit! If you have a blow torch, carefully toast the tops of each marshmallow until they are golden and bubbly and your house smells AMAZING!
Alternatively, you can pop them onto a baking tray and toast them under the grill for a few minutes. Be sure to keep a close eye on them though as they can go from toasted to burnt very quickly!
To add extra ‘pazzaz’ to your Brownie Bites, spray with a little gold shimmer spray. Store in an airtight container at room temperature and consume within 4-5 days.
