It’s cold. I want food that makes me feel warm inside. Cue this gorgeous Tomato Chicken recipe! Just like my creamy pesto chicken recipe, it’s all made in one pot so less dishes to wash (always a bonus.) It’s also filled with some of my favourite comfort foods. You’ve got tangy tomato, tender chicken, melted cheese, all warmed up with earthy spices and finished off with refreshing coriander. Sounds good doesn’t it??
Here is what you will need to serve 2.
- 1 – 2 tbsp Garlic infused Olive Oil
- 1 Onion, cut into small wedges
- 2 tsp Ground Cumin
- 3 tsp Ground Coriander
- Salt & Pepper
- 2 Chicken Breasts, sliced into strips
- 1 x 400g Tin of Chopped Tomatoes
- 1 tbsp Tomato Purée
- 35g Grated Mozzarella Cheese
- 1 tbsp Fresh Coriander, roughly chopped
- Cooked Rice, to serve (Optional)
- Large non stick Frying Pan with a Lid
In a large non stick frying pan, heat the oil over a medium heat. Add in the onion wedges and cook stirring occasionally for about 5 minutes until they start to soften.
Add the cumin & coriander to the pan and give it a good stir. Cook for 2 – 3 minutes more.
Season the chicken strips on both sides with a little salt then add them to the pan. Cook for about 1 minute on each side until browned but not cooked through.
Add the tinned tomatoes and the tomato purée then season with salt & pepper to taste. Bring it all to the boil then reduce to a simmer, pop the lid on and allow to cook for about 20 minutes.
Remove the lid and stir through the grated mozzarella. Continue to cook for 2 – 3 minutes until the cheese melts into the sauce and isn’t stringy anymore.
Take the pan off the heat and stir through the coriander. Have a taste, add some more salt & pepper if you think it needs it.
Divide the mixture between 2 plates & serve with cooked rice.
This is proper, hearty, winter comfort food. There’s just something about tomato based dishes like this that takes me right back to being a kid at my Mum & Dad’s house. It feels very homely to me. And of course it’s delicious too, which helps considerably!
