When I want a quick dinner idea, I always think of pasta, rice or couscous. For some strange reason I never think of gnocchi! Well no more. This gorgeously tempting One Pot Ham and Cheese Gnocchi has definitely won me over. It’s filling, it’s tasty and it’s all made in just one pot. Erm, yeah, where do I sign??
One Pot Ham and Cheese Gnocchi Recipe
Here is what you will need to serve 2 – 3.
Ingredients
- 1 tbsp Olive Oil
- 1/2 Onion, finely chopped
- 150g Ham, chopped *
- 300ml Chicken Stock
- 500g Pack of Gnocchi
- 75g Frozen Peas
- 30ml Milk
- Salt & Pepper
- 50g Cheddar Cheese, grated
* You will need either a good, thick cut ham or a ham joint that you can slice yourself.
Essential Equipment
- Large Non Stick Frying Pan with a Lid
Instructions
First off, prep your ingredients. Get that onion finely sliced, the ham chopped into thick pieces & the cheese grated.
Preheat your grill ready to melt the cheese later & get the frying pan set over a medium heat.
When the pan is hot, add in the oil, swill it around a little then add the onion. Fry for a few minutes, stirring occasionally, until soft and turning golden brown.
Add the ham to the pan and fry for another 2 minutes.
Then pour in the chicken stock and bring to the boil.
Add in the gnocchi & frozen peas, give it a stir then cover & simmer for 5 minutes.
Check the gnocchi is tender, if it is, pour in the milk and season to taste with salt & pepper. If not, pop the lid back on for another minute or two then add the milk & seasoning.
Scatter over the grated cheese and place under the preheated grill for 5 – 10 minutes until golden and bubbling.
Divide between 2 or 3 plates & dig in immediately!
I definitely think ham and cheese gnocchi will become a household staple with me, it makes a really delightful change from the same old meals I tend to stick to. Let’s face it, we’re all a bit guilty of that aren’t we?! I hope you enjoyed the post my lovelies, until next time!
