One Pot Chicken & Rice

One pot meals are my saving grace now I’m a Mum. Anything I can just chuck together in a dish, put in the oven and forget about until the timer goes off is perfect when you have a toddler that’s running around trying to kill herself on a daily basis! This gorgeous One Pot Chicken & Rice bake is exactly that. Simply dump it all in, cover it up & bake in the oven. It really is that easy! …and delicious. I mean, really delicious!

Here is what you will need to serve 4.

(Recipe adapted from The Seasoned Mom)

  • 1 x 500g Jar of Tomato & Garlic Sauce
  • 1 x 400g Tin of Chopped Tomatoes
  • 185g Basmati Rice
  • 4 Chicken Breasts
  • Salt & Pepper
  • 1 tsp Dried Basil *
  • 1 tsp Oregano *
  • 1 tsp Parsley *
  • 55g Grated Mozzarella
  • 25g Grated Parmesan Cheese
  • 2 tbsp Fresh Parsley, chopped (optional)


* Or you can use 1 tbsp of Italian seasoning

Essential Equipment

  • 33 x 23cm (13 x 9″) Ovenproof Dish



Preheat your oven to 190°C/Fan 180°C.

Mix together the tomato & garlic sauce, the chopped tomatoes and the rice in the ovenproof dish.

Place the chicken breasts onto the sauce/rice. If your chicken is quite thick, flatten it down a little with a rolling pin to make sure it cooks through.

Season the chicken with a little salt & pepper then sprinkle over the herbs.

Cover tightly with foil and pop into the preheated oven to bake for 45 minutes until the chicken & rice are cooked.

Divide the grated mozzarella and parmesan between the 4 chicken breasts.

Pop it back into the oven, uncovered, for 4-5 minutes until the cheese is melted. Serve immediately, garnish with a little chopped parsley if you like.

If you find the top of the rice has dried a little when melting the cheese, simply plate up the chicken then stir a little water through the rice. Problem solved!

I’m pretty sure it can’t get much easier than that! Well it can, you could order takeout but that’s nowhere near as juicy, delicious or healthy as this is! I was genuinely surprised at just how tasty this really is. Even Tilly polished off a huge bowlful to herself! (Most of you Mums out there will concur that anything you cook with actual effort for a toddler, generally gets instantly rejected.) This One Pot Chicken & Rice Bake was a massive hit in the KitchenMason household.

    Hi, can this dish be reheated later?
    Also, if you wanted to have it over several days, should it be frozen?

      Hi Nicole. Rice is a funny one as I’ve read that it can cause food poisoning quite easily. I always eat rice either straight after it’s made or chill and eat within 24 hours. I personally don’t think it’s worth the risk keeping it for longer. You could always halve the recipe instead? Emma x

    Hiya, do I have to cook the rice first or does it cook in the oven?

      Hi Lucy. No need to cook the rice first, it will cook in the oven. Because you’re covering it, it will absorb all the liquid.
