Everyone loves S’mores. Why wouldn’t you? It’s an incredible combo! You’ve got the crunchy texture from the biscuit base, the creamy sweetness from the marshmallow & a silky indulgence from the chocolate. It’s only natural to want to adapt this fabulous trio of flavours to create other delicious treats. Now it’s no secret that I love a good no bake cheesecake. They’re so easy to prepare & the fridge does all the hard work for you. So, without further ado, I give you my No Bake S’mores Cheesecake! (Recipe adapted from The Gracious Wife.)
Here is what you will need to serve 8.
For the Biscuit Base
- 160g Digestive Biscuits
- 60g Unsalted Butter
For the Filling
- 450g Philadelphia Original Cream Cheese
- 65g Icing Sugar
- 1 tsp Vanilla Extract
- 180g Marshmallows
- 200g Milk Chocolate
- 2 tbsp Milk
Essential Equipment
- 8″ (20cm) Springform Pan
Line the base of your pan with baking paper.
To make the base, blitz the digestive biscuits in a food processor (or bash in a freezer bag with a rolling pan if you need to de stress!) until small crumbs form. Meanwhile, melt the butter in a small saucepan over a low heat.
Pour the melted butter into the biscuit crumbs & pulse until it just starts to clump together.
Press the crumbs into the prepared base with the back of a metal spoon then pop into the fridge to set whilst we prepare the filling.
Pour the marshmallows into a large glass bowl and melt in the microwave for about 30 – 40 seconds.
Mix the melted marshmallow together with the cream cheese, icing sugar & vanilla extract until smooth. You can do this either in a stand mixer or in a large bowl with a spatula.
Break the chocolate into another large glass bowl. Add 1 tbsp of the marshmallow mixture & 2 tbsp of milk.
Microwave in 20 second intervals, stirring each time, until melted and smooth. If for any reason it splits, just keep adding a little milk & stirring until it becomes smooth again.
Pour the marshmallow mixture into the prepared base and spread evenly.
Top randomly with the chocolate mixture & swirl around with a knife or skewer to create a marbled effect.
Place into the fridge to set for a minimum of 4 hours. Overnight is better if you have the time.
When completely set, slice into 8 and serve! This should keep in the fridge for 3 – 4 days.
And there you have it! An insanely indulgent dessert that will wow your dinner party guests, friends & family. It’s a great make ahead dessert, and I think it’s always good to be able to take a bit of stress off the ‘big day!’
I hope you enjoyed the post my lovelies, until next time!
