Quick and Easy Microwave Lemon Fudge

Mother’s Day is just around the corner and you need a simple, quick & beautiful gift to give. Sounds impossible right? WRONG! This gorgeous Lemon Fudge is made in the microwave in minutes then the fridge does all the hard work for you. It’s perfect for the kids to help with too (making it ideal for a Mother’s Day gift you Dads out there – hint hint!)

Here is what you will need to make x36 pieces

  • 500g White Chocolate
  • 1 x 397g Tin of Condensed Milk
  • 30g (2 tbsp) Unsalted Butter
  • 2 tsp Lemon Extract
  • Yellow Food Colouring Gel
  • Sugar/Wafer Decorations

 

Essential Equipment

  • 20 x 20cm (8 x 8″) Square Baking Pan or Silicone Pan

 

Microwave Lemon Fudge Recipe

Lightly grease and line the base & sides of the baking pan. If you are using a silicone one like me, you don’t need to line it.

Break the chocolate into a large microwavable bowl then add the condensed milk & the butter.

Melt in the microwave on full power for 30 seconds. Give it a good stir then heat again in 10 to 20 second intervals stirring well between each time until it’s smooth & melted.

Add the lemon extract & a little food colouring gel. (Don’t add too much, remember you can always add more but you can’t take it out!) Give it a really good mix.

Working quickly so the fudge doesn’t set, pour the mixture into the prepared tin and smooth out with a spatula.

Quickly top with sugar and/or wafer decorations (if using larger decorations, bear in mind where you will be slicing later!)

Pop into the fridge to set completely for a good 4 hours or overnight. When it’s firm, remove from the pan and slice into 36 pieces. (A 6 x 6 grid.)

Store in an airtight container in the fridge for up to 1 week. If making for a gift, place in a nice gift box lined with baking paper or cellophane bags tied with a pretty ribbon. (Don’t forget to tell the recipient to store it in the fridge!)

I think you’re onto a winner with this one. There’s not many Mums (or anyone for that matter) that wouldn’t like to receive this lemon fudge! I love a good home made gift too, it’s much more personal and means so much more. And hey, they’re not to know that you only spent 10 minutes making it… that’s our little secret, shhh!
