Lemon Melting Moments Recipe
Makes approx 12 – 15
Ingredients
For the Biscuits
- 260g Unsalted Butter, Room Temp
- 60g Icing Sugar
- 1.5tsp Vanilla Extract
- 225g Plain Flour
- 50g Corn Flour
For the Filling
- 90g Unsalted Butter, Room Temp
- 240g Icing Sugar
- Zest of 1 Lemon
- 1 tbsp Freshly Squeezed Lemon Juice
Instructions
Preheat your oven to 190°C/Fan 180°C and Line a large baking sheet with baking paper or a baking mat.
Either using an electric stand mixer with the beater attachment or a large bowl with an electric hand whisk, cream together the butter, icing sugar and vanilla extract for about 5 minutes or until light and fluffy.

Sift in the plain flour and corn flour and beat until a dough forms.

Take tablespoon sized scoops of dough and roll into balls. Place them onto the prepared baking sheet spaced approx 2 – 3cm apart.
Then take a fork, lightly dust it in flour and press the tops of the dough balls down to flatten and create a pattern.

Bake in the preheated oven for 8 – 10 minutes until the edges are turning golden.
Meanwhile, let’s make the filling.
Again, either using an electric stand mixer with the beater attachment or a large bowl with an electric hand whisk, beat together the butter, icing sugar, lemon zest and lemon juice until light and fluffy. (At least 5 minutes.) You may need to scrape the bowl down once or twice to make sure it’s all mixed in well.

When the biscuits are cooked, allow to cool for a few minutes on the tray then transfer to a wire rack to cool completely before filling.
When they’re cooled, take heaped teaspoons of the filling and ‘dollop’ (yes that’s a technical term) them onto half of the biscuits.

Pair a biscuit with filling with a plain one and gently press together to make a ‘sandwich.’
If you really want to be picky, you could pipe the filling in but I quite like the more rustic approach. It’s certainly more time efficient when you have an 11 month old opening every cupboard and drawer in the kitchen!

I don’t know about you but I could definitely take time out my day to have some Lemon Melting Moments. They’re pretty darn quick to make and pretty darn quick to disappear!
The biscuit is so crumbly and literally melts away and the lemon filling has a wonderful kick and sweetness that makes you want to keep reaching for another! Store in an airtight container (metal is best) for up to 5 days.
