Like many of you, I don’t have all the time in the world to spend making dinner. Incredible meals like this gorgeous One Pot Meatball & Rice Bake are a genuine life saver! Comfort food at it’s absolute best, it tastes amazing, makes for minimal pot washing, takes about 2 minutes to prepare, then the oven does the rest for you. Sounds like a winner doesn’t it?! Well it is!
Here is what you will need to serve 4.
- 500g Jar of Tomato & Garlic Sauce
- 1 x 400g Tin of Chopped Tomatoes
- 185g Basmati Rice
- 20-24 x IKEA Chicken Meatballs (Or Similar Frozen Cooked Meatballs)
- 50g Grated Mozzarella or 2-3 Slices Mozzarella, Sliced
- 1 tbsp Fresh Parsley, Chopped (Optional)
Essential Equipment
- 33 x 23cm (13 x 9″) Ovenproof Dish
One Pot Meatball & Rice Bake Recipe
Preheat your oven to 190°C/Fan 180°C.
Mix together the tomato & garlic sauce, the chopped tomatoes and the rice in the ovenproof dish.
Then add in the meatballs and give it a stir.
Now cover the dish tightly with foil & place in the oven to bake for 45 minutes. Stir once half way through the cooking time to make sure it cooks nice & evenly.
When the cooking time is up and the rice is cooked to your liking, give it another stir then sprinkle over the grated mozzarella or lay on the slices of mozzarella.
Cover again with foil and pop back into the oven for another 5 minutes to melt.
When the cheese is melted, divide between serving bowls/plates and devour immediately! Sprinkle with a little chopped fresh parsley if you’re feeling fancy.
The keen eyed among you may have noticed that I used a square dish yet listed a 33 x 23cm (13 x 9″) Ovenproof Dish in the Essential Equipment. Well this is a prime example of ‘Do what I say, not what I do!’ The rice was slightly under cooked for my taste in the square dish but cooks much more evenly when spread out in a larger dish. Hence, use what I said not what is pictured! (We live and learn…)
This is genuinely delicious though and massively fuss free! Exactly the kind of food that I love, dump and bake.

Oh my gosh, LOVE THIS! I mean, the more ways I have to fit meatballs in my diet, the better ;) But this looks exceptional! Gotta try it soon!
