I find one pan meals make life SO much easier! Having tons of pots to wash after eating just doesn’t sit well with me. This gorgeous One Pan Sausage and Beans recipe fits the bill perfectly! Bags of flavour all in one pan, made with minimal effort and minimal pots. Exactly like my easy sausage casserole, it just sounds like a dream midweek meal to me!

Easy One Pan Sausage and Beans Recipe
Here is what you will need to serve 3-4
Ingredients
- 1 tbsp Olive Oil
- 6-8 Sausages
- 1 Onion, Finely Diced
- 2 Garlic Cloves, Finely Diced
- 2 Medium Carrots, Finely Diced
- 1 x 400g Tin Chopped Tomatoes
- 1 tbsp Tomato Purée
- 200ml Vegetable Stock
- 1/2 tsp Smoked Paprika
- 1 tsp Italian Seasoning/Mixed Herbs
- Salt & Pepper
- 1 x 300g Tin Haricot Beans, Drained & Rinsed
- Chopped Fresh Parsley, To Serve (Optional)

- Large Frying Pan
Instructions
First heat the pan over a medium heat then add the oil. Fry the sausages for 5-10 minutes until browned all over.
Remove the sausages from the pan then add the onion. Fry for 2-3 minutes until softened.
Then add the garlic and carrots and fry for 5-10 minutes until the carrots are softened. If they are taking longer to cook, pop a lid on and this will speed up the process.
Next pour in the tinned tomatoes, tomato purée, vegetable stock, paprika and herbs. Give it all a good stir then season with salt and pepper to taste.
Add the sausages back into the pan and bring it all to the boil. Reduce to a simmer and cook for 15 minutes until the sauce thickens.
Finally, stir through the drained/rinsed beans and simmer for a further 5 minutes.
Stir again and serve immediately. Scatter with a little chopped fresh parsley if you’re feeling fancy!
