Easy One Pan Mexican Breakfast Recipe

Ingredients and equipment

Here is what you will need to serve 3 people:

Ingredients

  • 2 tbsp Olive Oil
  • 1 Small Onion, peeled & diced
  • 1 Garlic Clove, peeled & minced
  • 1 Red Pepper, deseeded & diced
  • 1 Red Chilli, deseeded & diced
  • 2 Fresh Bay Leaves
  • Salt & Pepper
  • 1 x 400g (14 oz) Tin Chopped Tomatoes
  • 2 Medium Tomatoes
  • 3 Eggs
  • 3 Tortilla Wraps, to serve *
  • Grated Cheddar Cheese, to serve

*For a gluten free version either serve on it’s own or use gluten free wraps.

Essential equipment

  • Large Lidded Frying Pan
  • Spatula

Instructions

Once you have prepped all your veg, heat a large frying/sauté pan over a medium heat. Make sure you have a lid for it.

Add the olive oil (2 tbsp) into the pan followed by the onion (1 x peeled and diced), garlic (1 x clove peeled and minced), red pepper (1 x deseeded and diced), red chilli (1 x deseeded and diced) and bay leaves (x 2). Season with a healthy amount of salt and pepper and cook for about 15 minutes until soft and golden.

Add in the chopped tomatoes (1 x 400g | 14 oz) and bring to the boil. Cook for about 5 minutes until the sauce starts to thicken.

Give it a taste, if you think it needs it – add in some more salt and pepper.

Lay the sliced fresh tomato (2 x medium, sliced) over the sauce. Then make 3 wells, drop an egg into each one and sprinkle with a little salt and pepper.

Pop the lid on and cook over a medium heat for about 4-5 minutes or until the eggs are cooked how you like.

Spoon into the tortilla wraps and get it down ya! This is a seriously delicious breakfast and so easy to make. I love that it hardly makes any pots too! Certainly makes a change from that boring bacon and egg cob. Yes, it’s a ‘cob’ where I come from!

This Mexican breakfast recipe is a hearty, healthy flavoursome way to start your day!

Ingredients

  • 2 tbsp Olive Oil

  • 1 Red Pepper, deseeded & diced
  • 1 Red Chilli, deseeded & diced
  • 2 Fresh Bay Leaves
  • Salt & Pepper
  • 1 x 400g (14 oz) Tin Chopped Tomatoes
  • 2 Medium Tomatoes
  • 3 Eggs
  • 3 Tortilla Wraps, to serve *
  • Grated Cheddar Cheese, to serve

  1. Place your frying pan over a medium heat, then add the oil. Follow this with the onion, garlic, red pepper, chilli and bay leaves. Season with salt and pepper then mix well. Cook, stirring often, for about 15 mins. It should be soft and golden.
  2. Next add the chopped tomatoes. Season with more salt and pepper if needed, then bring to the boil. Cook stirring frequently until thickened (about 5 mins).
  3. Lay the sliced tomatoes over the top and make 3 wells. Crack the 3 eggs into the wells and top with a little more salt and pepper.
  4. Place the lid on top and continue to cook for about 4-5 mins, until the eggs are cooked to your liking. You can then serve and eat it as is, or serve with tortilla wraps and grated cheese.

Notes
