These delightfully simple Easy Lemon Bars are very easy to make and perfect for sharing! With a crunchy biscuit base & a sharp lemony topping, they’re sure to be a big hit with family and friends. I do love a good tray bake!

Here is what you will need to make 15 bars.
- 225g Unsalted Butter, cold & cubed
- 110g Golden Caster Sugar
- 250g Plain Flour
- Pinch of Salt
- 335g Golden Caster Sugar
- 30g Plain Flour, seived
- 4 Eggs
- Zest & Juice of 2 Lemons
- Icing Sugar, to decorate
- 30 x 20cm (12 x 8″) Rectangular Baking Tin
- Food Processor
Easy Lemon Bars Recipe
Grease & line the base and sides of the baking tin and preheat your oven to 180°C/Fan 170°C.
In a food processor, blitz together all the ingredients for the biscuit base until it looks like fine breadcrumbs.
Tip the mixture into the prepared baking tin (it will seem a little powdery but it’s fine, don’t worry!) Press it in with the back of a metal spoon.
Bake for 20 – 25 minutes until the edges are just starting to turn golden.
Allow to cool for a minute whilst we make the topping.
In a large bowl, whisk together the caster sugar, flour, eggs, lemon zest & juice. Allow to stand for 10 minutes then whisk again.
Pour the mixture on top of the slightly cooled biscuit base and put back into the oven to bake for a further 20 – 25 minutes until set & lightly browned.
Then allow to cool completely in the tin before removing and slicing into 15 pieces. (A 3 x 5 grid.)
Dust the tops with a generous sprinkle of icing sugar then store in an airtight container and consume within 3 days.
And there you have it! Easy Lemon Bars that are crunchy, tart and delicious! You can’t ask for much more than that can you?
