This insanely simple crostini recipe is totally delicious! Tomato, mozzarella & pesto is a classic & beautiful combination. You know it’s going to be incredible and it takes next to no time at all to prepare. Literally the perfect party food! Here is what you will need to make approx 16.
- 1 x 30cm Baguette (approx)
- Olive Oil, for brushing
- 2 – 3 Salad Tomatoes
- 2 x Balls of Fresh Mozzarella
- 95g Pesto
- Salt & Pepper
Preheat your oven to 190°C/Fan 180°C and line a large baking sheet with baking paper (optional.)
Slice the baguette into 1″ slices then brush one side with olive oil. Place the slices oiled side up onto the prepared baking sheet & pop into the preheated oven for about 10 minutes until golden and crispy.
Meanwhile, slice the tomatoes & mozzarella.
When the slices are ready, smear a good dollop of pesto onto the top of each one.
Lay a slice of mozzarella on each one then top with a slice of tomato.
Sprinkle a little salt & pepper over them all and serve straight away. (If you are making ahead, don’t add the salt and pepper until you are ready to serve.)
