Caramel Pecan Fudge, I guarantee it tastes just as good as it looks! Did I mention that it’s ridiculously easy to make too? It literally takes minutes in the microwave then the fridge does all the hard work for you. Have I got your attention now? Good!
Here is what you will need to make 36 devilishly delicious pieces.

Lightly grease and line the base & sides of the baking pan. If you are using a silicone one like me, you don’t need to line it.
Break the chocolate into a large microwavable bowl then add the condensed milk & the butter.
Melt in the microwave on full power for 30 seconds. Give it a good stir then heat again in 10 to 20 second intervals stirring well between each time until it’s smooth & melted.
Add in the vanilla extract and the chopped pecans and stir until mixed well.
Working quickly so the fudge doesn’t set, pour the mixture into the prepared tin and smooth out with a spatula.
Load the caramel into a piping bag & snip a small bit off the end. Pipe thin-ish lines along the fudge.
Take a skewer/cocktail stick or even a sharp knife & gently drag lines up then down along the whole thing.
Pop into the fridge to set completely for a good 4 hours or overnight. When it’s firm, remove from the pan and slice into 36 pieces. (A 6 x 6 grid.)
Store in an airtight container in the fridge for up to 1 week. (Not that it will last that long!)
Didn’t I tell you it was easy?! Even the pretty feathered caramel on top isn’t as difficult as you’d think! I managed to actually bring myself to share this with friends and it got a resounding thumbs up. Everyone thought it was yummy! I genuinely love the crunch from the pecans in this and that beautiful caramel on top makes it so inviting… you HAVE to try it!
