Crunchy on the edges, chewy in the middle and packed full of chocolate chips. These gorgeously addictive Choc Chip Oat Cookies are the stuff dreams are made of! Just like my homemade chocolate hobnobs recipe, they’re really simple to make and also come with the Mr’s HUGE thumbs up. In fact, he’s actually banned me from taking any out the house… I think that should give you an idea on exactly how good these babies are!
Here is what you will need to make 16-18
(Recipe adapted from Liv for Cake)
- 95g Plain Flour
- 1/2 tsp Bicarbonate of Soda
- Pinch of Salt
- 115g Unsalted Butter, Room Temp
- 100g Light Brown Soft Sugar
- 25g Golden Caster Sugar
- 1 x Egg, Room Temp
- 1 tsp Vanilla Extract
- 135g Rolled Oats
- 175g Milk Chocolate Chips
Choc Chip Oat Cookies Recipe
First up, sieve the flour, bicarbonate of soda & salt into a small bowl and set to one side.
Then in an electric stand mixer (or a large bowl with an electric hand whisk) beat together the butter and both sugars until light and fluffy.
Lightly beat the egg then pour into the mixer. Mix well. It will seem like it won’t come together but it will, just keep mixing for a couple of minutes. Then stir in the vanilla extract. (Don’t worry if it’s a little bit curdled.)
Next, fold through the flour mixture with a spatula.
Then dump in the rolled oats and fold through again.
Lastly, mix through the chocolate chips.
Now for the messy bit! Take 5cm/2″ sized blobs of dough and roll into balls. I find it easiest to use an ice cream scoop to make sure they’re all going to be the same size.
Place them onto a plate and, for best results, chill for at least an hour before baking.
When the balls are chilled, preheat your oven to 180°C/Fan 170°C and line a baking sheet with a silicone baking mat or baking paper.
Then space out the cookie balls and bake for 10 minutes until the edges are a lovely golden brown. You will probably need to bake in 2-3 batches.
Allow to cool for a few minutes on the tray then transfer to a wire rack to cool completely.
Store in an airtight container (I prefer metal) at room temperature and consume within 5 days.
I told you it would be easy! And the fact that they have oats in them make you feel like you are making a healthier choice. I won’t lie to you, they’re not healthy. But you feel like they are… just a little bit. Oh who am I kidding, they’re the pinnacle of comfort food in one beautiful choc chip filled chewy bite!
