Chocolate dipped strawberries will be perfect

Still stuck on what to do for your Valentine this year? Why not give these gorgeously romantic, cheesecake filled, chocolate dipped strawberries a try? Just like my no bake strawberry cream cake, they’re quick and easy to make. So perfect for a last minute idea!

You honestly wouldn’t believe how delicious they are as well! I mean, chocolate dipped strawberries are amazing on their own, but add vanilla cheesecake into the mix and OH MY LIFE you’ve got heaven in a bite! 

Recipe tips

There can be some unexpected challenges making chocolate dipped strawberries. Here are a few tips that will help you avoid disappointment…

  • It’s important to double check the strawberries when you buy them. You want them quite firm but not green. And obviously not soft and over ripe, or they will be very difficult to work with!
  • When hollowing your strawberries, don’t leave the skin too thin. Otherwise it will be very difficult to coat in chocolate later.
  • Assemble these no earlier than 2 hours before serving. Any more, and the strawberries will seep too much liquid. Things will get quite messy!
  • Once your strawberries have been hollowed, remove excess moisture by dabbing the insides with kitchen roll.
  • Make sure you fully dry the strawberries after washing. Any remaining water could seize the chocolate.

Ingredients

What you will need to serve 4.

  • 160g (1 + 1/3 Cup) Philadelphia Original Cream Cheese
  • 60g (2/3 Cup) Icing Sugar
  • 1 tsp Vanilla Extract
  • 400g (14 oz) Punnet of Strawberries
  • 150g (5.3 oz) Milk Chocolate
  • 50g (1.8 oz) White Chocolate (Optional)

Essential equipment

  • Electric Stand Mixer or Large Bowl with an Electric Hand Whisk
  • Sharp Knife
  • Chopping Board
  • Piping Bag and Nozzle
  • Baking Sheet
  • Glass Mixing Bowl

Instructions

To make the cheesecake filling, either in an electric stand mixer with the balloon whisk attachment or a large bowl with a hand whisk, whip together the cream cheese (160g | 1 + 1/3 Cup), icing sugar (60g | 2/3 Cup) and vanilla extract (1 tsp) until it’s light, smooth and holds it’s own shape.

Chill in the fridge until needed.

Meanwhile, prepare the strawberries (400g | 14 oz). Give them a wash and dry them thoroughly. Any water left on them could make the chocolate seize so it’s worth doing properly.

Hull them as you would do normally, then hollow out a little more so you can fit in more of that gorgeous cheesecake filling! (Don’t go too thin though as it will make it difficult to dip in the chocolate later – as I discovered!)

Strawberries tend to seep juice once they’ve been cut so I actually found it best to dab the insides with a bit of kitchen roll before filling. Also, due to the seeping liquid, it’s best to not make these more than a couple hours before you plan on eating them.

Load a piping bag with a nozzle of your choosing and add the cheesecake filling. I used a 2D drop flower nozzle (affiliate link).

Place on a baking sheet lined with baking paper and pop into the fridge to chill whilst we melt the milk chocolate (150g | 5.3 oz).

Either in a glass bowl set over a pan of barely simmering water or in the microwave in 10 second intervals – gently melt the chocolate.

Remove the strawberries from the fridge and dip each one into the chocolate. Set back on the lined baking sheet.

When all the strawberries have been dipped, pop back into the fridge to set.

Or, if you like, you can go a little further with the decoration and melt some white chocolate (50g | 1.8 oz) in the same way as you did the milk. Then pour this into a piping bag, snip the end and pipe zig zags over each strawberry.

Chill in the fridge to allow the chocolate to set. If you are short on time – pop them in the freezer and they will set quicker.

The verdict?

Now you can enjoy them with your loved one. Who will be totally bowled over by how incredible these naughty little treats are by the way!

Seriously, don’t fill up on dinner when you have made these – you will want as much room spare in your belly as possible! No they’re not healthy, and no they’re not low calorie, but what is it all for if we can’t be a little mischievous every now and then eh??

Trust me, you NEED to make these. You will love them, your other half will love them and generally there will just be lots of cheesecake, strawberry, chocolate love in the air!

  1. Beat together the cream cheese, icing sugar and vanilla in an electric stand mixer until smooth and creamy. Refrigerate until needed.
  1. Wash and thoroughly dry the strawberries. Hull them with a sharp knife then take a little more flesh out the centre, to allow for more filling. Don't make them too thin.
  2. Load a piping bag with a nozzle and fill with the chilled cheesecake. Dry the insides of the strawberries with a little kitchen roll, then pipe cheesecake into each one. Place on a lined baking sheet and refrigerate until needed.
  3. Break the milk chocolate into a glass mixing bowl. Gently melt either set over a pan of barely simmering water, or in 10 second intervals in the microwave. Dip each strawberry into the chocolate and set back on the lined baking sheet. Refrigerate until serving. If you like, you can also melt white chocolate and zigzag stripes over each strawberry for decoration.

Notes

Serve no more than 2 hours after making. Keep refrigerated.
