When it comes to meats, mine and the Mr’s favourites are definitely chicken and bacon. Chicken is so versatile and seems to soak up whatever flavours you surround it with, and bacon – who doesn’t love bacon?! This recipe happily marries the two together and teams up with a boozy white wine sauce. You can’t say you’re not tempted by Boozy Bacon Chicken can you??
So! Here is what you will need to serve 4.
(Recipe adapted from Nigella Express)
Butterfly the chicken breasts by slicing carefully through the middle, (giving you 4 thin slices from the 2 breasts) and slice the bacon into pieces.
Heat a large frying pan over a medium heat then add in the garlic oil.
Fry the bacon pieces until crispy. Remove from the pan and set to one side.
Turn the heat up to high and fry the chicken for about 2 minutes on each side until lightly golden and cooked through.
Remove from the pan and place on a warmed serving dish. Crumble over the bacon pieces.
Add the wine into the frying pan and let bubble away for a couple of minutes until you get a nice, thin, boozy sauce.
Pour over the meat and serve with some boiled potatoes drizzled with olive oil & herbs of your choosing.
How good is this Boozy Bacon Chicken?! The trick to having quick, meaty meals, is making sure the meat is thin enough. If it’s too thick, naturally it will take much longer to cook. This recipe is is the perfect example. Slicing the chicken in half literally halves the cooking time. Making it a brilliantly quick, mid-week meal that’s great for the whole family! If it’s just the two of you? Save the two extra portions & have them in an epic sandwich the next day for lunch. You’ll have some jealous people in the office!
