Baked Eggs in Tomatoes

This wonderful Baked Eggs in Tomatoes recipe is a simple, delicious and healthy way to start your day! It would also make a fabulous lunch or midweek meal too. This classic breakfast combination is one that we all know works, it’s always nice to have it in a different way though!

Baked Eggs in Tomatoes Recipe

Here is what you will need to serve 2.

Ingredients

  • 2 Beef Tomatoes, Room Temp
  • 4 Eggs, Room Temp
  • Salt & Pepper
  • 1 tbsp Fresh Parsley or Chives, chopped
  • Toasted Bread/Roll, to serve *

*Skip this for a gluten free option or use gluten free bread.

Instructions

Preheat your oven to 230°C/Fan 220°C.

Halve and deseed the tomatoes. Then slice a thin piece off the bottom so they don’t roll about on the tray.

Baked Eggs in Tomatoes

Place the prepared tomatoes onto a baking tray, crack an egg into each one then sprinkle over some salt & pepper. You may want to be a little cautious when cracking in the egg as there might not be quite enough room for all the white.

Place the tray into the preheated oven for 10 – 12 minutes until the whites are cooked through and the yolks are still a little soft. Given the variation of ovens, the cooking times may vary so keep an eye on them to ensure they bake to how you like.

Meanwhile, toast some bread or halved rolls. When the eggs are cooked to your liking, place on top of the toasted bread, sprinkle with some freshly chopped herbs and devour immediately!

I LOVE this recipe! Not only is it deceptively simple to make, it really is delicious. It’s almost a bonus that it just happens to be healthy! I would happily eat this frequently for breakfast or lunch and, do you know what? I think I just might!
