Ok this recipe is almost too simple to warrant a post. However, I fear that not as many people as I thought have tried, or even heard of the incredible ‘Avocado & Egg’ combo! This is an absolute travesty! Not only is it insanely healthy for you, it’s ridiculously delicious too! Seriously, if you haven’t tried this, get on it this weekend. I promise you won’t regret it!
Here is what you will need to serve 2.
- 1 Ripe Avocado
- 1 – 2 tsp Lemon Juice
- Salt & Pepper
- 2 Eggs
- 2 Slices of Thick Bread
- Sliced Tomato, to serve (optional)
Avocado & Egg on Toast Recipe
Slice the avocado in half & remove the stone. Scoop out all the flesh and place it into a small bowl.
Add the lemon juice & a small amount of salt. Give it a good mix, it should make an almost ‘paste’ like spread.
Meanwhile, toast the bread and fry the eggs. You could poach your eggs to make this even healthier.
Divide the avocado between the two slices of bread and spread evenly with a knife. Top with a fried egg and sprinkle with a little salt & pepper. Serve with a few slices of fresh tomato if you wish.
Have I sold it to you yet? No? Really?? Ok, so it’s super healthy, it tastes INCREDIBLE, it’s made in like 10 minutes and it’s so simple my cats could make it. Go on, give it a try. You might surprise yourself! I certainly did the first time I tried it. I’ll be honest, I’m not really a huge fan of ‘green’ food. This is genuinely lovely though and one of the exceptions to my rules! Great for breakfast, brunch or lunch and cheap too! Have a go yourself next weekend, you won’t regret it.
