This super quick and healthy avocado and egg on toast recipe is so insanely simple to make I’m almost embarrassed to call it a recipe! Fresh, good for you and speedy, this easy cooked breakfast is almost too good to be true.
This recipe really is almost too simple to warrant a post. However, I fear that not as many people as I thought have tried, or even heard of the incredible ‘avocado and egg’ combo! This is an absolute travesty! Not only is it insanely healthy for you, it’s ridiculously delicious too.
Rotate this with some smoothies and homemade granola and you’ll get a winning start every single morning!
Avocado and Egg on Toast – Easy Step by Step Picture Recipe
Here is what you will need to serve 2.
- 1 Ripe Avocado
- 1 – 2 tsp Lemon Juice
- Salt and Pepper
- 2 Eggs
- 2 Slices of Thick Bread
- Sliced Tomato, to serve (optional)
Slice the avocado in half and remove the stone. Scoop out all the flesh and place it into a small bowl.
Add the lemon juice and a small amount of salt. Give it a good mix, it should make an almost ‘paste’ like spread.
Meanwhile, toast the bread and fry the eggs in a little oil or butter. You could even poach your eggs to make more healthy!
Divide the avocado between the two slices of bread and spread evenly with a knife. Top with a fried egg and sprinkle with a little salt and pepper. Serve with a few slices of fresh tomato if you wish.
Have I sold it to you yet? No? Really?? Ok, so it’s super healthy, it tastes INCREDIBLE, it’s made in like 10 minutes and it’s so simple my cats could make it.

I’ll be honest, I’m not really a huge fan of ‘green’ food. This is genuinely lovely though and one of the exceptions to my rules! Great for breakfast, brunch or lunch and cheap too! Have a go yourself next weekend, you won’t regret it.
