So Christmas has gone, New Years is over and it’s back to the grind. Boooooo!! Oh well. At least our breakfast doesn’t have to suffer! These lovely, chewy Apple & Cinnamon Oat Bars are perfect for when you’re constantly on the go. Never say no to breakfast again! It is the most important meal of the day after all.
Here is what you will need to make 9.
- 290g Ready/Quick Porridge Oats
- 2 tsp Ground Cinnamon
- 150g Dried Apple Pieces
- 1/4 tsp Salt
- 115g Unsalted Butter
- 100g Light Brown Sugar
- 60ml (75g) Golden Syrup
- 60ml Semi Skimmed Milk
- 1 tsp Vanilla Extract
- 20 x 20cm (8 x 8″) Square Baking Tin
- Food Processor
Lightly grease & line the sides of the baking tin and preheat the oven to 170°C/Fan 160°C.
Blitz 175g of the porridge oats in a food processor until it almost becomes a fine flour.
Tip into a large bowl and mix with the remaining 115g of oats. Mix in the cinnamon, apple pieces & salt and set to one side.
In a medium saucepan, gently melt together the sugar, butter and golden syrup over a medium heat. Stir until the sugar is dissolved then remove from the heat.
Whisk in the milk & the vanilla extract.
Pour the mixture into the dry ingredients & mix well with a spoon or spatula until all the oats are evenly coated and there are no dry patches left.
Tip it all into the prepared tin and press very firmly with the back of a metal spoon.
Bake in the preheated oven for 15-20 minutes until the edges have started to turn golden.
Allow to cool completely in the tin before removing & slicing into 9 pieces. Store in an airtight container for up to a week.
I personally love breakfast and would never go without! For those that struggle though, these delicious oat bars are definitely the answer. Chewy, fruity, wholesome and pretty healthy! I can think of much worse ways to start your day!
