Once upon a time, my all time favourite cookie recipe married tons of Daim bar chunks & chocolate chips… you know this is a story that ends well! Chewy crumbly chocolate chip cookie and oodles of crunchy, sweet Daim bar caramel pieces. Just for good measure, I taste tested like 9 of them to make sure they were safe for public consumption. Don’t tell me I never do anything for you! Daim Bar Cookies are definitely a winner.
Here is what you will need to make 20 – 24
- 160g Unsalted Butter
- 280g Soft Light Brown Sugar
- 1 Egg
- 1 tbsp Vanilla Extract
- 250g Plain Flour
- 1/2 tsp Bicarbonate of Soda
- 1/2 tsp Salt
- 1 x 100g Bag of Chocolate Chips
- 200g (7 x 28g Bars) Daim Bars, Roughly Chopped
- Large Baking Sheet
- Silicone/Non Stick Baking Mat
- Ice Cream Scoop (mine measures approx 5cm diameter x 2.5cm deep)
Daim Bar Cookies Recipe
First heat the butter in a bowl in the microwave in 10 second intervals until it’s just melted.
Then in an electric stand mixer or a large bowl with an electric hand whisk, cream together the melted butter & the sugar until blended well.
Then add the egg and the vanilla extract & beat again until smooth.
Now sift in the plain flour, bicarbonate of soda & the salt and beat until it just comes together to form a dough.
Next throw in the chopped Daim pieces & chocolate chips. Give it a mix until evenly distributed.
Now tip all that beautiful dough into a large bowl and chill in the fridge. Overnight if you can.
If you’re short on time, scoop equal sized balls of dough onto a baking sheet & pop in the freezer for 20-30 minutes. This will chill them much quicker.
When the cookie dough is chilled, preheat your oven to 180°C/Fan 160°C and line your baking sheet with the silicone/non stick baking mat.
If you haven’t already, as above, scoop equal sized balls of cookie dough. Place a few cookie balls on the tray with plenty of room between each one.
Bake in the preheated oven for 10 minutes or until golden.
Allow to cool on the tray for 2-3 minutes before transferring to a wire rack to cool completely.
Store in an airtight container at room temperature and consume within 6-7 days.
You’ve got to admit, these Daim Bar Cookies are pretty special. Just look at them!! Huge beautiful chunks of crunchy Daim bar in a wonderful chocolate chip cookie hug. These are so good that the Mr actually banned me from taking any out the house! I had to smuggle them out in my stomach… ssssh!! Don’t tell him!
