Beautifully soft & creamy Rolo Caramel Fudge that requires only 4 ingredients, a microwave and about 10 minutes of your time. Sounds too good to be true right? Well it isn’t!! It’s REAL people! Very, very real. So real in fact, that I made a batch just 24 hours ago and it’s already gone. You know you need this in your life…

Here is what you will need to make approx 36 pieces.
- 400g White Chocolate
- 1 x 397g Tin of Carnation Caramel
- 125g Icing Sugar, sifted
- 350g Rolos
Essential Equipment
- 20cm (8″) Baking Tin or Silicone Pan
Rolo Caramel Fudge Recipe
If you are using a baking tin, line the base and sides with baking paper. If you are using a silicone pan, you don’t need to line it.
First up, break the white chocolate into a large glass bowl then pour in the caramel.
Melt in the microwave on full power for 30 seconds. Give it a good stir then heat again in 10 to 20 second intervals stirring well between each time until it’s all smooth & melted.
It’s worth noting that you can also do this step in a saucepan over a low heat too, so don’t worry if you don’t own a microwave!
Then gently stir in the sifted icing sugar.
Finally, stir through 3 quarters of the rolos.
Now all you need to do is pour the mixture into your prepared tin.
And press the remaining Rolos right into the top.
That’s it! Now pop it into the fridge for 3-4 hours or overnight to set before slicing into 36 pieces. (A 6×6 grid.)
Store in an airtight container in the fridge and consume within 1 week.
Didn’t I tell you it was easy?! This recipe’s a keeper for sure. I love microwave fudge. It’s so ridiculously quick & easy to make and it really does make lovely gifts for friends and family. Something to remember with Christmas coming up!
