This incredible 4 ingredient Cookies & Cream Rocky Road is so quick & easy to make even my toddler could do it! Melt, mix & set. That’s literally it. It really does taste delicious too. Cookies and cream (Oreos & white chocolate) is always a winner in my book but top it with more chocolate & more Oreos? Yep, that’ll do it. Totally sold! This is another great recipe for the kids to help out with too and it would even make a very lovely gift.
Here is what you will need to make 12 – 16 bars.

- 200g Oreos
- 300g White Chocolate
- 60g Mini Marshmallows
- 200g Milk Chocolate
Essential Equipment
- 20cm (8″) Square Baking Tin
Cookies & Cream Rocky Road Recipe
Firstly, line your tin with baking paper and set to one side.
Then finely chop 100g of the Oreos.
Next, break the white chocolate into a large bowl and heat in the microwave for 20 seconds. Give it a good stir then continue to heat in 10 second intervals, stirring well between each time until it’s melted & smooth.
Tip in the finely chopped Oreos and marshmallows and give it a good mix.
Pour the whole lot into your lined tin & press the mixture firmly into the edges & corners. Pop into the fridge to set for 30 minutes.
When the first layer has set, roughly chop the remaining 100g of Oreos. (So a little bit bigger than the ones in the white chocolate.)
Then break the milk chocolate into a large bowl and heat in the microwave for 20 seconds. Give it a good stir then continue to heat in 10 second intervals, stirring well between each time until it’s melted & smooth.
Pour the chocolate over the bottom layer & smooth out with a spatula.
When every nook and cranny is filled, scatter over the chopped Oreos and lightly press them in to make sure they stick.
Then pop it back into the fridge to set completely. (About an hour to be sure.)
When set, slice into however many bars you like. You could do 16 square bars (a 4 x 4 grid) or 12 finger bars like I did (a 6 x 2 grid.) Store in an airtight container and consume within 1 week.
It’s entirely your preference as to whether you keep them at room temperature or in the fridge.
And there you have it! Super easy, super delicious Cookies & Cream Rocky Road bars. It really took me by surprise just how tasty these babies really are. I mean, I knew they were going to be good. I just didn’t realise they’d be that good! You should totally give them a go.
