So we’ve all done it, forgotten about that punnet of strawberries in the fridge & let it go a bit over ripe. Well now you can make something awesome with it instead of throwing it out! This fantastic Strawberry Ice Cream recipe requires just 3 ingredients, takes about 10 minutes to make & you don’t even need an ice cream machine! What are you waiting for? Let’s get cracking!
Here’s what you will need to make approx 1 litre of ice cream.
- 1 x 400g Punnet of Ripe Strawberries
- 1 x 250g Tub of Mascarpone Cheese
- 397g Can of Condensed Milk
- Large Lidded Plastic Tub (bigger than 1 litre so there’s room to stir)
Strawberry Ice Cream Recipe
Give the strawberries a wash under cold water & dry them off with kitchen roll.
Hull & quarter them and place in a large bowl.
Mash them as much as you can with the back of a fork.
Tip in the mascarpone cheese & blend it all together. Don’t worry if it’s a bit lumpy, it will become smooth later.
Pour in the condensed milk & give it a good stir with a whisk.
Pour the mixture into the large plastic tub & place in the freezer.
Remove every 30-40 minutes & stir vigorously with a whisk or spatula. This will help to stop any ice crystals from forming and keep your ice cream nice & smooth. Keep going until the ice cream is too firm to stir.
Leave out at room temperature for 15-20 minutes to soften before serving.
This really is a super easy recipe! It’s a great one to get the kids involved in too, just make sure an adult takes care of the hulling and quartering of the strawberries. The flavour is gorgeous as well, so creamy & refreshing! A real taste of Summer. I took this, along with some flat bottomed cones & some sprinkles, to a family gathering. Ordinarily I would freak out at her eating any sweet treats at such a young age, but because I know exactly what went into this & there are no added sugars or preservatives, I felt a whole lot more relaxed! She definitely seemed to enjoy it but then, I’m not at all surprised. She is my daughter after all!
