Apple Berry Summer Fruit Crumble Recipe

This beautiful Summer fruit crumble recipe is guaranteed to bring the family together! From picking the berries yourself to topping them with a crispy golden crown – this apple berry Summer fruit crumble is a dessert must!

Berry picking is such a ‘bring the family together’ activity, I absolutely love it! This year was very special as it brought 3 generations together and was the first time my 2yr old daughter took part.

Safe to say she loved it and actually exclaimed, “Mmmm! They’re like sweeties!” So long as she believes that I’m not going to tell her otherwise!

You can make oodles of treats with your fruity treasures. My Gran’s easy apple crumble is one but my favourite is a Summer fruit crumble.

Gorgeous, ripe and delicious fruits topped with a crunchy, buttery crumble. Serve it with some vanilla ice cream or homemade custard and you really can’t go far wrong with this delightful pud!

What is crumble topping made of?

Crumble topping is made of 3 simple ingredients. Butter, flour and sugar. Different recipes use different ratios but the ingredients are almost always the same! The butter is best used cold and cubed.

Can fruit crumble be frozen?

Absolutely yes! Fruit crumble can be frozen ready for another day. (This is a bonus if you pick way more berries than you can possibly eat in one day!)

Ingredients

Here’s everything about the ingredients

  • Blackberries and Raspberries – Best when in season and even better picked fresh! You could use frozen in a pinch though.
  • Apple – A nice sharp green apple gives the best flavour and texture here. There are often apples ripe and ready for picking at the same time as the berries. For even more apple tips, see how to cut an apple.
  • Sugar – I love to use golden caster sugar as it gives a slight caramel flavour, but regular caster sugar (superfine in the US) works great too.
  • Water – Straight from the tap is fine.
  • Butter – Use a good quality unsalted butter (like Lurpak) for the best flavour. Always make sure it’s cold before using it in a crumble though!
  • Flour – Plain flour (all purpose in the US) is best here as we don’t want any raising agents.
  • Salt – I always add table salt to my bakes if using unsalted butter. You season your dinner, why wouldn’t you season your treats too?!

How to make apple berry Summer fruit crumble – recipe summary

  1. Mix together blackberries, raspberries, apple, sugar and water.
  2. Pour mixture into an oven proof dish.
  3. Rub together butter, flour, sugar and salt to make a crumble.
  4. Scatter crumble over the top of the fruit.
  5. Sprinkle a little sugar over the top.
  6. Bake for 40-45 mins until golden.

Recipe tips

Here are some tips I think you will find helpful when making Summer fruit crumble.

  • Make sure you wash your fruit, especially if you’ve picked it yourself! It’s important to get any little bugs off before we eat them.
  • Use cold, cubed butter when making your crumble. Otherwise you will get into a melty mess!
  • Using a pastry blender (affiliate link) makes quick and easy work of the crumble. They’re cheap and very handy, I highly recommend you get one!
  • Pop a baking tray/sheet under your oven proof dish when you bake as there’s every chance your fruit might bubble over.
  • Don’t skip scattering extra sugar over the top at the end. It’s adds a lovely extra sweet crunch!

How to store apple berry Summer fruit crumble

Allow your fruit crumble to cool completely before storing any leftovers, covered, in the fridge for up to 3 days. You can also freeze your unbaked fruit crumble for another day.

Apple Berry Summer Fruit Crumble – Step by Step Picture Recipe

Ingredients

Here is what you will need to serve 6-8.

  • 250g (1 + 2/3 Cup) Blackberries, washed
  • 110g (7/8 Cup) Raspberries, washed
  • 200g (1 + 5/8 Cup) Green Apple, peeled, cored and chopped
  • 1 tbsp Golden Caster Sugar
  • 1 tbsp Water
  • 85g (1/3 Cup) Unsalted Butter, cold and cubed
  • 140g (1 + 1/8 Cup) Plain Flour
  • Pinch of Salt
  • 50g (1/4 Cup) Golden Caster Sugar
  • Extra Golden Caster Sugar, for sprinkling

Essential equipment

  • Ovenproof Dish (mine is 22 x 15 x 5 cm Oval)
  • Large Mixing Bowl
  • Pastry Blender (optional but handy!)

Instructions

First preheat your oven to 190­°C/Fan 180°C/374ºF and grease the sides of your ovenproof dish.

If you haven’t already, wash the blackberries (250g | 1 + 2/3 Cup) and raspberries (110g | 7/8 Cup) and prepare the apple (200g | 1 + 5/8 Cup). Then tip the blackberries, raspberries and apple into your prepared dish and add in the sugar (1 tbsp) and water (1 tbsp). Give it a really good mix.

To make the crumble, put the butter (85g | 1/3 Cup), flour (140g | 1 + 1/8 Cup), salt (pinch) and sugar (50g | 1/4 Cup) into a large bowl.

(Note: you will have an easier job if you cube your butter a little smaller than mine! I was in a bit of a rush when I made this.)

Then either using a pastry blender or rubbing lightly between your forefingers and thumbs – mix until you get a light crumble.

Don’t worry too much if there are a few big bits of butter left but if you cubed your butter smaller than mine, like I mentioned above, you should be fine anyway!

Scatter the crumble over the top of the fruit.

Finally, a top tip from my Gran. (You may remember her from such posts as Gran’s incredible ham and cheese quiche.) Scatter over about 1/2 to 1 tbsp of extra sugar over the top. This makes it really nice and crispy!

Then finally place on a baking tray (just in case the fruit bubbles over) and bake in the preheated oven for 40-45 minutes until the fruit is bubbling and the crumble is golden and crunchy.

  2. Blend together the cold cubed butter, flour, salt and sugar in a mixing bowl using a pastry blender. (Alternatively you can rub it between your forefingers and thumbs.) Continue until you achieve a crumble texture.
  3. Scatter the crumble mixture evenly over the top of the fruit.
  4. Finally sprinkle over a little sugar for an extra crispy finish.
  5. Place on a baking tray and bake for 40-45 mins until golden and bubbling.

I shall make this tomorrow with blackberries and apples from my garden but will add a handful of porage (or porridge) oats to the crumble mix for an even crunchier topping. Keep it up with the excellent recipes.
