No Bake Eton Mess Bars

These No Bake Eton Mess Bars are so ridiculously quick and simple to make, they’re the perfect for any summer or festive get together. Or even in Winter when you just want a taste of Summer! Packed with biscuit, berries and meringue then smothered in oodles of white chocolate, you know you’re onto a winner!

Here is what you will need to make 15 bars.

(Recipe adapted from Scrummy Lane)

  • 250g Digestive Biscuits
  • 150g Unsalted Butter
  •  2 tbsp Golden Syrup
  • x3 Shop Bought Meringue Nests, chopped
  • 200g Mixed Dried Berries
  • 400g White Chocolate


Essential Equipment

  • 30 x 20cm (12 x 8″) Rectangular Baking Tin

Firstly line your tin with baking paper and set to one side.

Then either in a food processor or a plastic bag with a rolling pin, blitz/bash the biscuits until they become fine crumbs.

Melt your butter together with the golden syrup in 10 second intervals in the microwave then pour into the biscuit crumbs. Give it a little mix until it starts to clump together.

Mix through three quarters of the chopped meringue and three quarters of the berries.No Bake Eton Mess Bars

Then tip the mixture into your prepared tin and press in evenly & firmly.

Next, break the white chocolate into a large microwavable bowl. To temper the chocolate, with your microwave on half power, gently heat the chocolate in 10 – 15 second intervals stirring well between each time. When it’s about two thirds melted, the bowl should be warm enough to continue melting the rest so just stir until it’s nice and smooth. The trick is to not get the chocolate too hot. Remember, Mary Berry always says that a chocolate bar can melt in a child’s pocket!

When it’s melted and smooth, pour your chocolate over the biscuit base & spread out evenly with a spatula.

Finally, scatter over the remaining chopped meringue and berries. You may need to press a few bits in so they stick.

Allow to set at either room temperature or in the fridge, it’s entirely your preference. Then slice into 15 bars (a 3 x 5 grid.)

Store in an airtight container again, room temperature or fridge is fine, and consume within 7 days.
