Life seems to make us all so busy these days. Sometimes it’s tough to make sure a good, tasty meal gets to the table instead of opening the packets or ringing for a takeaway.

This incredible Slow Cooker Mongolian Beef recipe is the answer to your prayers! Packed full of flavour and mouth watering steak, this is a midweek meal you’ll go back to again and again.

Just a bit of chopping then dump it all in, pop the lid on and leave the slow cooker to do all the hard work for you.

Easy Slow Cooker Mongolian Beef – Step by Step Picture Recipe

Here is what you will need to serve 4

Ingredients

  • 680g Sirloin Steak, thinly sliced
  • 1 x Onion, sliced
  • 1 x Red Pepper, sliced
  • 3 x Garlic Cloves, minced
  • 150ml Light Soy Sauce
  • 200ml Water
  • 1/2 tsp Ground Ginger
  • 125g Hoisin Sauce
  • 160g Smooth Apricot Jam
  • 3 tbsp Corn Flour & 3 tbsp Water, to thicken

You can serve this with whatever you like. Rice, noodles, couscous, whatever!

Essential Equipment

  • Slow Cooker (Mine has a 3.5 litre capacity)

Instructions

Firstly, slice your steak, onion & peppers and mince the garlic cloves. Throw it into the slow cooker.

In a large bowl, whisk together the soy sauce, water, ground ginger, hoisin sauce & apricot jam.

Pour it into the slow cooker & give it a little mix.

Pop the lid on and cook on slow for 5 hours.

30-45 minutes before you want to eat, mix together the corn flour and water then stir it into the steak. Allow to continue cooking until the sauce thickens to a consistency you’re happy with.
