One Pot Mushroom Rice

Being a Mum I’m always on the lookout for no fuss, one pot midweek meals. You can never have enough in your armoury! After falling in love with this one pot lentil dahl, mushroom rice was a perfect and welcomed change. It’s easy to make, creates minimal pot washing and tastes blinkin’ delicious! Do you need any more excuses to try it for yourself? Thought not!

That being said, if you’re after something a little more impressive – I highly recommend this incredible wild mushroom risotto recipe!

One Pot Mushroom Rice – Step by Step Picture Recipe

Here is what you will need to serve 4.

Ingredients

  • 200g Basmati Rice
  • 1 tbsp Olive Oil
  • 1 Onion, finely diced
  • 1-2 Sprigs Rosemary, stripped & finely chopped
  • 250g Mushrooms, sliced
  • 2 Red Peppers, diced
  • 1 x 400g Tin Chopped Tomatoes
  • 425ml Vegetable Stock
  • Salt & Pepper
  • Chopped Parsley, to garnish (optional)

Essential Equipment

  • Large Ovenproof Saucepan/Dish with a Lid

Instructions

Preheat your oven to 190°C/Fan 170°C.

Tip the rice into a sieve and rinse with cold water until the water runs clear.

Heat the saucepan over a medium heat then add the oil. Add the onion then fry for a few minutes until softened.

Add the rosemary & mushrooms and fry for a minute or two.

Add the rice and give it a good stir. Then throw in the peppers, tinned tomatoes, stock and some salt & pepper. Bring it all to the boil and cover with a lid.

Pop into the oven and bake for 20 – 25 minutes until the rice is cooked to your liking.

Divide between serving bowls and scatter with a little chopped parsley if you like.

This One Pot Mushroom Rice has got some serious flavour! I shared it with my parents and all of us were making yummy noises whilst eating it. My daughter even ate 2 bowls!! Definitely a big hit.

Now I’m aware that it may look a little ‘sloppy’ in my photos. That’s what happens when your toddler wakes up earlier from her nap than expected. Then starts emptying all your kitchen cupboards and pulling at your legs whilst you’re trying to cook. It’s a little distracting!
