Easy Full English Baked Frittata Recipe

Breakfast baked frittata

Baked frittatas are incredibly versatile, and a brilliant way to use up leftovers. Got half a courgette in the fridge? Chop it up and throw it in. Handful of tomatoes on the brink of being over ripe? Chuck them in too! It saves food waste AND money. Win!

Despite often being called a breakfast frittata, they’re actually great for any time of day. You can make it more of a midweek meal with sides like air fryer fries and homemade coleslaw. Or you can enjoy it all on it’s own for a light lunch. The choice is yours!

Ingredients

Here is what you will need to serve 4.

  • Oil, for frying
  • 2 Sausages, sliced and uncooked
  • 4 Bacon Rashers, sliced
  • 150g (2/3 Cup) Mushrooms, sliced *
  • 140g (5 oz) Cherry Tomatoes, halved
  • 6 Eggs
  • 3 tbsp Milk
  • Salt and Pepper
  • 1 tbsp Fresh Parsley, chopped (optional)

*you can use any type of mushroom you have/like

Essential equipment

  • 30 x 22cm (12″ x 8.5″) Rectangular Oven Proof Dish
  • Baking Paper
  • Large Non Stick Frying Pan
  • Jug

Instructions

Preheat your oven to 180°C/Fan 170°C/356ºF and lightly grease and line the dish with baking paper.

Heat the frying pan over a medium heat, then pour in a little oil. When hot, add the sausages (2 x sliced and uncooked) and bacon rashers (4 x sliced) and fry until cooked through and golden. Stir often.

Then tip them into the prepared dish, and spread out evenly.

Back to the pan, which is still over a medium heat, add the mushrooms (150g | 2/3 Cup) and fry for a few minutes until cooked. You can add a little more oil if you need to.

Next, add the tomatoes (140g | 5 oz) to the pan and fry for 1-2 minutes. Just to soften them a little.

Then scatter the mushrooms and tomatoes into the lined dish. Alongside the sausage and bacon.

In a jug, beat together the eggs (x 6), milk (3 tbsp) and a very generous helping of salt and pepper.

Then pour into the dish, and bake in the preheated oven for 20-25 minutes, until set. Keep a close eye on it for the last few minutes.

Once baked, scatter the frittata with some freshly chopped parsley (optional), slice and divide between four plates. Serve alongside some beans for the complete Full English Breakfast effect!

Didn’t I tell you it was easy? Full English Frittata makes it sound a bit posh, but it’s basically just good old fashioned English comfort food, with a slightly fancier name! Still equally as delicious though I promise you.

This full English baked frittata is an easy and delicious weekend breakfast! Also ideal as a light lunch or paired with sides for a tasty weeknight meal.

Ingredients

  • Oil, for frying
  • 2 Sausages, sliced and uncooked

  2. Evenly spread the cooked sausage and bacon out in the lined dish. Set to one side.
  3. Add more oil to the frying pan if needed. Then fry the mushrooms for a few minutes until cooked. Add the tomatoes and fry for a further 1-2 mins to soften.
  4. Spread the mushrooms and tomatoes out over the sausage and bacon in the dish.
  5. In a jug, beat together the eggs, milk and plenty of salt and pepper. Pour into the dish, over the rest of the ingredients.
  6. Bake in the oven for 20-25 mins, until cooked through.
  7. Scatter with parsley (optional), divide between 4 plates and serve immediately. Perfect with beans, for that 'full English' taste!

Notes
